5 homemade ice creams you can make in under 30 minutes

It's that time of year again! The hotter weather means ice cream time, all day every day! What could be better than to cool off with a scoop (or three) of ice cream, especially if you can make it yourself in minutes? 

These five homemade ice cream recipes are so easy, require a handful of ingredients, and take less than 30 minutes, start to finish. No ice cream machine; no fuss - just fresh, homemade, frozen goodness you will want to make again and again!

Banana and peanut butter swirl

A classic for a good reason! Bananas blend into a beautifully creamy texture, making them an incredible healthy base. And when you throw in a swirl of peanut butter? Boom – instant magic. 

What you need: 

- 2 ripe bananas

- 1 or 2 tablespoons of smooth peanut butter. 

How to make it: 

Slice your bananas and freeze for at least 2 hours beforehand (or keep a stash of frozen bananas in the freezer ready to go!) Blend the frozen banana slices until smooth – you will be surprised at the texture, it’s like soft-serve ice cream. Swirl in the peanut butter gently to create that beautiful, speckled ripple effect. Serve immediately, or if you want a more solid texture, freeze for about 10 minutes.

Strawberries and cream

This is a fruity classic, it is fresh, creamy, and super simple. 

What you need: 

- 2 cups frozen strawberries

- ½ cup double cream

- 1 tablespoon honey or maple syrup (optional - if your berries are in season and ripe, you might not need this).

How to make it:

Blend everything together until smooth. You might want to add a little sweetener if your berries aren’t super ripe. Enjoy as is for a soft and slushy texture, or if you prefer more of a scoopable consistency freeze for 15 - 20 minutes.

Mango coconut magic 

Refreshing and completely dairy-free, it tastes like a tropical vacation in every bite.

What you need:

- 1 cup frozen mango chunks

- ½ cup full-fat coconut milk

- Squeeze of lime juice

How to make it:

Blend all ingredients until creamy/smooth. The coconut milk makes it rich and the lime gives it a little zest. It's great straight from the blender, but you can freeze it for 10-15 minutes if you like it firmer.

Instant coffee crunch

Have a frozen twist to your favorite beverage, with a little crunch for texture. It's bold, sweet, and completely addictive.

Ingredients:

- 1 cup whipped cream

- 1 tablespoon instant coffee (mixed with 1 tbsp hot water)

- 2 tablespoons sweetened condensed milk

- A handful of crushed cookies or chocolate chips

How to make it:

Gently fold the whipped cream with the coffee, condensed milk and any extras you choose. You can eat it right away and it will be a nice light fluffy treat, or you can put it in the freezer for 15-20 minutes to firm it up.
